Carl “Chef Bo” Ferrara opened Ferrara’s Sausage Company with the idea of continuing the legacy started by his family. He uses both his family’s original sausage recipes and recipes he developed himself. Chef Bo uses only the finest ingredients, as he believes we should all be eating something good!
The Ferrara family started making Italian sausage in Saratoga Springs, New York, in 1932. Today, Bo’s sausage is made the same way, using all-natural casings and only high-quality, fresh pork or chicken, along with all-natural ingredients and no additives, MSG, or nitrates.
After leaving New York over 40 years ago to pursue his passion for working in the culinary field, Chef Bo found himself in Florida. After spending years creating amazing dishes that blended his traditions with bold creativity, he discovered that cooking was more than a profession—it was his language of love, memory, and connection. Chef Bo poured his heart into every dish.
For Chef Bo, the kitchen wasn’t just where food was made; it was where relationships were nurtured, where laughter echoed, and where the past and present danced together. His journey wasn’t just about mastering recipes; it was about the magic of creating new memories, which continues to fuel his passion.
As a true New York Italian, he knows what real Italian sausage should taste like and found it almost impossible to buy in Florida. That’s when Chef Bo decided it was time to take matters into his own hands. To the delight of his friends and family, his passion and commitment led him to spend all his free time making the best homemade sausage they had ever tasted.
Today, Ferrara’s Sausage Company is a dream come true as Chef Bo combined both his family’s original sausage recipes and the recipes he developed into a business.
